Taste the Season in Every Bite

This is a new kind of luxury pop-up restaurant that nobody has experienced before. No walls and no bright lights, just a beautifully dressed table set in a custom-built glass marquee that puts nature at your fingertips.

Every gathering grows from what’s around us, with open-fire cooking at its heart. The season writes the menu, and what’s reared, caught, or made nearby does the rest.

It’s an experience that’s rooted, real, and impossible to forget.

FIRE AT THE CENTRE

Food tastes better when it’s cooked over the flames. Our open-fire cooking method, led by outdoor cookery chef Ross Anderson, brings incredible local ingredients to life.

Flavours that roam

We put the land, the sea, and the season on your plate. Every menu is bursting with hyper-local, seasonal produce sourced from trusted farmers, fishermen, and artisans.

Bring the inside out

Settle into our glass marquee and take it all in. Protected from the elements but face-to-face with nature, it’s a luxury outdoor dining experience that never shuts out the wild.

Leave no trace

Our whole setup treads lightly. Every choice, from solar power to biofuel, and our ‘bring your own napkin’ ethos respects the land we borrow for the night.

Intimate by nature

We limit the number of guests each night across our seasonal events. This makes the experience a rare, personal, and unforgettable luxury outdoor dining: a moment you’ll remember for years to come.

How the Evening Unfolds

01 01

A welcome in the wild

On arrival, you will be guided through trees, fields or flower rows, depending on the season and setting. There’s always space to park, though your wheels might get a taste of the countryside. Guests are encouraged to dress for the season, not the occasion.

02 02

Finding your place

A chilled glass of English sparkling wine from a local vineyard and a selection of three canapés will greet you as you marvel at your venue for the evening. Our in-house sommelier will guide you through our seasonal drink menu from a small, focused list that’s tailored to what’s on the grill.

03 03

3 courses in the open

As you settle down for the evening, you’ll see Ross Anderson cooking over flames just feet away. Nothing is hidden behind kitchen walls, and you’re free to ask questions, share a moment, or get to know some of the growers and artisans who’ve supplied what’s on your plate.

04 04

Enjoy the afterglow

After your final course, you’re invited to linger for a post-dinner drink. Sample a warming rum or whiskey by the same fire that cooked your dinner, chatting with fellow diners as the night starts to wind down under the stars.

Meet the Chef:
Ross Anderson

If there’s one chef who has turned fire into philosophy, it’s Ross.

From military beginnings to cooking for royalty and politicians, Ross’s career has taken him across Europe’s kitchens and into some of the most prestigious restaurants. Along the way, he’s taught the next generation, created private dining experiences, and discovered his true passion for outdoor cookery.

Now, through ROAM, Ross brings a personal touch to every table. Specialising in alfresco dining over open flames, he creates menus that are honest, exciting, and unique.

Taste fire, flavour, and integrity in every dish.

“I’ve built my whole career on a love of food and fire. There aren’t many ingredients that aren’t made more delicious after a lick of smoke and time on the grill.”

– Ross Anderson

Four Seasons, Four Places, Four Weeks.

A luxury outdoor dining experience that follows the rhythm of the year.

For the autumn months, we’ve moved to Lower Norton Flower Farm. With open fields, late blooms, and gentle evening light, it’s the perfect place to slow down over good food in great company.

We haven’t revealed our spots for later seasons yet, but you can be sure they’ll bring the same sense of place and new, delicious flavours.

Wherever the path leads, something delicious is waiting.
